What is the Mai Suya game?

Mai Suya is a suya grill game set at a roadside stall in Lagos. Suya is one of Nigeria’s best-loved street foods: thin strips of spiced meat on sticks, grilled over charcoal, dusted with yaji and wrapped in paper. The mai suya, the grill master, keeps the fire going all night while the queue grows.

A night at the stall runs from 19:00 to 01:00 in game time. You buy stock before opening, keep the charcoal hot, and serve every order before the customer gives up. What you earn pays for a better stall the next night.

How does a night work in this Nigerian street food game?

  1. Before opening: buy your stock

    Meat for the night, yaji, onion, tomato and cabbage, and charcoal by the bag: ₦300 a bag, about 3 hours of fire. Buy too little and you close early; buy too much and your cash sits unsold.

  2. Light the charcoal and set the heat

    Three flames beside the grill set the fire: low, medium or high. High cooks fast but eats charcoal and leaves less time to flip; low keeps the queue waiting.

  3. Grill and flip

    Put a skewer on an empty spot. When the first side is done, flip it in time, then let the second side cook. Tap it onto the plate when it is done; left on the grill too long, it burns.

  4. Season and wrap

    Each customer wants their own spice: no pepper, regular or extra yaji, with or without onion, tomato and cabbage, wrapped in newspaper or boxed.

  5. Serve, count the naira, upgrade

    Hand over the order before the customer gives up, take the haggle or refuse it, and at 01:00 read the night’s takings. Then spend them on a better stall.
